Winemaking: From our north facing slopes high on the valley side of the property, this fruit captures the full sunlight and cool maritime breezes. Low yielding cropping levels to ensure maximum sugar and flavour ratio.
Hand-picked, basket pressed with fermentation in open vats to ensure gentle tannin extraction. Barrel aged for 24 months in 100% Grande Reserve French Oak barriques with the new oak component being 35% with 2, 3 and 4 year oak old barriques.
Minimal intervention when bottled.
Tasting Comments: - A deep velvet red colour, the bouquet almost jumps out the glass with crème de cassis (a fancy way of saying black current) black cherry, sweet spice and hints of cocoa powder underneath. All the above fruits follow through onto the palate with some mulberries and plums coming through. A generous rounded mouth feel with no tannic astringency. This wine will keep evolving for many years.
Minimum order quantitiy is six bottles (either all the same wine, or a selection to make a mixed box). A 10% discount is offered on purchases of 6 bottles, and 15% discount for 12 bottles of more.
