Yield: 4 tonne/hectare
Soils: Alluvial flats and quartz gravel. Sandy loam and non wettable sandy loam
Winemaking: Dry grown, hand-picked, basket pressed - 10% being whole bunches - malolactic fermentation in barrel. Aged for 22 months in 100% Grande Reserve French Oak used with the new oak component being 35% with 2, and 3 year old oak barriques. The new oak percentage has come from middle of the Forrest growth oak with a tighter knit and seamless feel.
Minimal intervention when bottled.
Tasting Comments: There is no mistaking that this is a Margaret River Cabernet Sauvignon , the pedigree of this wine is certainly on show with its deep crimson-purple colour that just hangs onto the glass. The bouquet is filled to the brim with all the black fruits; cassis, cherries, plums, brambles, mulberry, red blossoms, cocoa bean and hints of confectionary sugar. Everything you have smelt is replicated on the palate with the balance between fruit, oak and super fine tannins being faultless. The finish is very generous, silky and limitless. This is the definition of elegance.
